What it's for
You can use these special seeds in the greenhouse to breed Nordic fruits, which you can load onto Captain Barnacle's ship when he docks in the harbor and asks for them.
Premium rose hip seeds are a special seed you plant in the Greenhouse on the Main farm, Gourmet farm or Flower farm to grow rose hips, one of the three kinds of Nordic fruit in the game. They unlock at level 30, which makes them among the very first premium seeds you'll come across. The seed itself isn't processed anywhere else, as its only purpose is to grow rose hips in the Greenhouse. Those most often go to Captain Barnacle down at the Harbor, but you'll find other uses for them on the farm too.
How to get it
You can't buy these seeds in the Shop and there's no recipe for them in the game, so no combination of goods on the farm will get you any. They land in temporary storage as a reward, typically from events and completed quests, and from there you move them straight to the Greenhouse. So the quickest route to rose hips isn't production but collecting rewards - once you have the seed, growing it in the Greenhouse is a single step.
What to do with it
The seed grows into rose hips in the Greenhouse, which you load onto Captain Barnacle's ship when it docks in the Harbor and happens to ask for rose hips. They don't have to end there though - in the Farm laboratory you turn them into special rose hip seeds, in the Jam factory into rose hip jam, and if you have no better use for them, you sell them for a base price of 5000 Dollars.
