The market hall and customer contracts
The market hall, which the game shows on the farm under the name Organic Market, is where I take the crops I grow and the goods I make to sell them to customers through customer contracts. I normally have six contracts available at a time and every customer wants a different amount of different goods depending on what I am currently producing on my farms. Contracts pay for deliveries in various currencies, so the market hall is one of my steady sources of income alongside selling directly.
The market hall is in my view one of the most reliable sources of income in the game, because the contracts adapt to what I can already produce, so I can practically always fill them. It is worth checking several times a day and not leaving completed items sitting there undelivered by the delivery truck.
The Organic Market offers six contracts that adapt to my production

In the game I find the market hall under the name Organic Market and it is used for selling crops and other products to customers with various needs. I normally have six contracts available at once, with each customer asking for a larger amount of one specific good.
The advantage of the contracts is that they take into account the production options of the farms I have already unlocked, so according to the in-game help I should be able to meet the demand under any circumstances. Customers also keep an eye on what I actually produce on my farms and adjust their requirements accordingly, so the contracts gradually adapt to the way I farm.
A contract shows what still needs making and what is ready to deliver
Each contract can contain up to six different products. Right in the market hall I get an overview for each of them showing which product I still have to make and which items I already have ready to deliver.
Thanks to that I can plan my production ahead - I just look at what the contracts are missing and schedule what to harvest or process on the farms accordingly.
Completed items leave on the delivery truck and pay in various currencies
Once I donate all the required products into a contract, the contract is still not automatically finished. I have to send the products off by clicking the green delivery button, which dispatches them on the delivery truck, and only after that do I get paid.
I do not have to donate the products all at once either. I can add them gradually as I harvest or produce them and start the delivery only when the contract is complete. Payment for contracts usually comes in various currencies, typically dollars, experience points or horseshoes, depending on the particular customer.
Personal customer visits and the occasional vendor bring a bonus
Every now and then a queue of customers with a special interest in my crops appears in front of the market hall. The faster I meet their request, the more dollars I get for it, so it pays to react to the queue as soon as it shows up and not keep it waiting.
In much the same way, a vendor with a special offer sometimes turns up in front of the building. Along with the usual products he also offers tokens and valuable fertilizers, so it is worth having a look from time to time at what he has in stock.
A similar principle works with dairy contracts too

Besides the market hall, I have also come across dairy contracts in the game, which work on a similar principle. I fill a contract that gradually raises my level at that spot when I complete several of them in a row. The difference is in the reward, because these contracts also pay out so-called joker tokens.
There is a limit to how many joker tokens I can pile up, though. Once I hit the cap, the game tells me at the next contract that should award tokens that I will not get any from it and offers me the choice of picking a different contract or using up the tokens I have saved first.
