Dollars
Dollars are the basic Big Farm currency that every farmer needs for the day-to-day running of the farm. You pay with them for constructing buildings, for production costs and for items in Farm Management. Unlike Gold, which can be bought, Dollars are earned directly in the game, mainly by selling your own products and completing quests.
Dollars are an ordinary currency, but an absolutely essential one - without them the farm will not run for a single day, while you can happily keep playing without any Gold. They are worth paying attention to mainly at the start, until the farm itself earns more than construction and production eat up.
Dollars keep the farm running
Dollars are the everyday currency of the game, and a farmer needs them literally every single day. They are not some extra bonus - without Dollars you will not get anywhere on the farm, because they pay for practically everything the farm needs to operate.
According to the in-game help, Dollars pay for almost all items in the Build and Farm Management menus, as well as for production costs and for certain start-up costs of some activities. So without a decent stock of Dollars you cannot start a new building or a new production run.
Selling products brings in the most Dollars

The main source of Dollars is selling your own farm products - raw goods from fields and animal buildings as well as finished products. Selling them is what genuinely pays for the farm's everyday running.
The second source is quest rewards. The game also hands out Dollars as a reward for quests, so it pays to complete them regularly instead of leaving them half-finished just for the experience points or the items.

Spending Dollars touches practically every part of the farm, from construction to daily production.

From my own experience it pays to keep an eye on how many Dollars the farm burns through on these regular expenses, and not to blow the whole reserve at once on several buildings under construction at the same time.
Dollars and Gold have different jobs in the game
Dollars and Gold are two separate currencies. Gold is the premium currency - you can buy it, get it for reaching a higher player level, as a daily login bonus or as a reward for selected quests, and it is mainly used for special buildings, decorations and for instantly finishing quests in progress.
Dollars do not belong in that category. They are earned by playing, by selling products and completing quests, and their job is to keep the farm's everyday operation going, not to speed it up.
